Recipe Spotlight:

Blueberry Muffin Chia Pudding 

Ingredients:

 

1/2 cup unsweetened yogurt of choice

1 cup of frozen blueberries, thawed

2 tbsp of maple syrup

3 tbsp of rolled oats

1 tbsp vanilla 

3/4 cup unsweetened coconut milk or milk of choice

1/3 cup of chia seeds

2 dates

1/2 tsp salt

Instructions:

  1. Blend the base: Add the yogurt, blueberries, maple syrup, rolled oats, pecans, vanilla, salt, and milk to a blender. Blend until smooth, adjusting sweetness or salt to taste.

  2. Mix the chia pudding: Pour the mixture into a container and stir in the chia seeds. Let sit for 10 minutes, stir again to break up any clumps, then cover and refrigerate for at least 1 hour (or overnight) until thickened.

  3. Prepare the crumble: Toast the oats in a dry skillet over medium-low heat for about 8 minutes, stirring frequently, until lightly golden. (Optional: toast in a little butter for extra flavor.) Let cool.

  4. Make the topping: In a food processor, pulse the pecans and Medjool dates until crumbly. Add the toasted oats, lemon zest, and a pinch of salt, then pulse a few more times to combine.

  5. Assemble & enjoy: Layer the chia pudding with the pecan-date crumble in a bowl or jar. Top with fresh blueberries, or extra granola if desired, and enjoy!

Chia Seeds: Tiny but nutrient-dense, chia seeds are packed with fiber, plant-based omega-3 fats, and protein. They support digestive health, promote fullness. 

Blueberries: A good source of fiber, rich in antioxidants, particularly anthocyanins, which help protect cells from oxidative stress.

 

Eating foods rich in fiber helps feed the good bacteria in your gut. A healthy gut microbiome plays an important role in digestion, immune function, and overall well-being.​
